The vines that produce Cuevallana Shiraz are located at an altitude of 850m, which is beneficial to the ripening process since this keeps the grapes fresher, which is very important for the life of the wine. They are harvested in the middle of September, at the perfect point of ripeness for those who seek a structured wine. After a refrigerated pre-maceration, it is left to ferment in small stainless steel containers with short and light pumping. In this way, we get a wine with intense and vivacious colours out of a special vine, with a bouquet of ripe strawberries, plums and sweet cherries. In the mouth it is fresh, with an immersive velvetiness that carries us off to this one-of-a-kind vineyard.
Espalier cultivation: This is the most commonly used method on new plantations. It involves putting up a wire course, at various heights, through which the plants are guided in one sole direction or plan.
